What is an industrial blast chiller?

An industrial blast chiller rapidly cools freshly cooked food through the temperature danger zone, where bacteria multiply. The FDA Food Code requires cooked food to drop from 135°F to 70°F within 2 hours, and to 41°F within 4 more hours: a blast chiller does it reliably, batch after batch, and many processors run faster cycles to protect texture and flavor. Most projects are engineered for the product and volume, and ZGROUP also offers two standard containerized units: 30 HP (2 pallets) and 50 HP (8 pallets or rolling carts), installed next to your line with no construction.
